South Indian Mutton Gravy

Ingredients List:-

Mutton, curry cut with bones - 1 kg (Lamb or Goat Meat)
Masala Paste:
4 Red Chilli Powder 
6 tsp   Coriander Powder
2 tsp   Cumin Powder             
2 tsp   Fennel Powder           
1 tsp   Turmeric Powder     
Water- 1/2 cup Whole Spices
2 pc     Cinnamon-                     
2 pc     Bay Leaf-                    

Other Ingredients: -
Small Shallots-           200 gms (peeled and halved, keep whole if small ones)
Curry Leaves-            15-20
Ginger Garlic paste-   3 tsp
Tomatoes, sliced-       2 medium (150 gms) 
Salt -                           2 tsp
1/4 tsp for seasoning
Refined Oil-                5-6 tbsp
Coriander Leaves
chopped-                    2 tbsp

 

Preparation: -

Process: - Heat oil in a pressure cooker or pan. ( Try Agroshoppy SS Cooker and Cast Iron Kadai- Add the cinnamon & bay leaves. Give a stir and add the shallots. Fry 1 min on medium heat and then add the curry leaves. - Fry on medium heat for 5 mins till shallots are soft and light brown. - Now add the ginger garlic paste, mix and fry on low heat for 2 mins. - Add the sliced tomatoes, give a mix and add 1/4 tsp salt. Fry on medium heat for 3-4 mins till tomatoes are soft. - Now add the Spice Mix made earlier, give a mix and cook on medium to low heat for 3-4 mins till oil separates.

Add the mutton pieces and fry on high heat for 2-3 mins. - Continue to fry on medium heat for another 7-8 mins till oil separates. - Add 300 ml water, give a mix and pressure cook for 4 whistles. (On high heat till the 1st whistle and then on low heat for another 3 whistles. Should take a total of around 15-18 mins) - Alternatively, in case you’re not using a pressure cooker, continue to cook covered in the same pan, for 45-60 mins till meat is tender. Give a stir few times and add water as & when necessary. - Open the lid of the pressure cooker once the pressure is released and simmer it for a few minutes. Garnish with the chopped coriander leaves, mix and serve.
